Pumpkin Cake

Ingredients

  • 2 cups sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups all-purpose flour
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1/2 tsp. salt
  • 2 cups pumpkin puree

Preheat oven to 350

For cake, combine sugar, oil, eggs and pumpkin puree in a large mixing bowl; whisk together until well blended.

Combine all dry ingredients in a separate bowl and whisk together.

Whisk dry ingredients into oil mixture; mixing well to combine. Pour batter into greased bundt pan.

Bake for 55 minutes until top is set and browned. Cool in pan for 15 minutes and then turn out onto wire rack to cool completely.

Cream Cheese Frosting:

1/4 cup unsalted butter, softened

1 8 oz. package of cream cheese, softened

1-pound sifted confectioners sugar

2 tsp. vanilla

For icing, beat butter and cream cheese until smooth; beat in vanilla and then beat in powdered sugar until well combined and smooth.
